THE MIND BEHIND THE BAR: ETHAN LESLIE LEONG
Ethan Leslie Leong is a trailblazer in Singapore’s culinary and cocktail scene. A visionary chef, award-winning mixologist, distiller, and judge of international cocktail competitions — Ethan has spent over two decades shaping how Singapore eats, drinks, and celebrates.
Crowned Bartender of the Year in 1997, he went on to establish some of the nation’s most influential bars including Maison Ikkoku, Drink Culture, and the legendary Bar Stories — Singapore’s very first craft cocktail bar that sparked the artisanal cocktail movement in Kampong Glam.
Ethan is also the creative force behind the world’s most expensive cocktail at USD $35,000, and was personally commissioned to craft signature cocktails for the wedding of Crazy Rich Asians star Henry Golding.
His collaborations span global luxury houses — Rolex, Chanel, Rolls-Royce, Penhaligon’s, Häagen-Dazs, Guess Collection, Agnes B, Zespri, Lipton, and more — where he continues to innovate at the intersection of gastronomy, design, and bespoke experiences.
